If there were 30 MB in the mempool, why i cant see 30MB block, but few 8MB blocks?

The miners can choose how big the blocks are that they mine.

Why don't miners want to mine 32MB blocks? Bigger blocks = more fees

Because the technology is new, miners are scared that their blocks will be orphaned which will cost them. They moved gradually to 8mb the previous stress test. Will move gradually up.
