1% fee can't compete with MobilePay on Point-of-sale here in Denmark.

Small-value payments may be cheaper than MobilePay. Nordea charges merchants 0.30 - 0.75 DKK per transaction.

Another issue: I've set up Bitpay in my mom's shop and we tried doing some transactions. When she received money to her bank, they charged her 20 DKK converting from EUR to DKK.

There are too many money conversions when using crypto payment processor, each taking a fee. Crypto can not compete with new national electronic payment systems.

Hopefully merchants will eventually see the value in keeping the BCH and not converting it.

I really hope so. Alternatively we could put fiat currency on blockchain as a token until it matures. I think bitEUR is great because it doesn't depend on a reserve in a bank.

Yes, so depending on how many transactions you have, you need to have purchases with a price lower than 30 - 75 DKK. With Bitpay you also get 30 transactions each month for free......
