'?p=all&offset=25' is the URL appendage to show a page of posts from 25-50, but can we somehow hack our way to show all of a profiles posts in one request??? '?p=all' does not work!

Unfortunately no, only pages of 25. We plan to open an API in the future which would provide easier access.
