Couple questions. First can OpenBazaar data be stored on a server or NAS drive so it can be used from multiple comptuers? Second can it calculate shipping and print labels like ebay?

Bitcoin Core mandatory update means segwit is no longer optional. All core nodes will now have segwit. You could still run other implementations but few do that.
Just some food for thought. If you can't get people to update regular nodes how are you going to get them to update LN nodes in a timely manner? Everyone running a node only works in fantasy world
