Some people need carbs. My mom has to incorporate carbs atleast once a week to keep losing, but if my dad has any he stops losing. It doesn't work for everybody. And the thought "im not having carbs so i can eat as much as i want" is dangerous
Im not saying keto doesn't work, both my parents lost a ton of weight on it. But if you like bread and potatoes its not going to work in the long run. Its best to make a lifestyle change verses following a diet with restrictions, it leads to binge eating.

Stay away from Gatorade. Theres so much sugar in it that its counter intuitive. Get sugar free or try propel if you need the elctrolytes, but an electrolyte supplement mix would be best. But unless your vigorously working out/sweating you dont need it.
Also take measurements of your body, or take pictures because as you lose weight you will gain muscle, muscle weighs more than fat so its going to make the scale go up, so you need a way to track "non scale victories" to help keep you on track.
You should be drinking enough water that your urine is clear. Theres a way you can figure it out by your weight. But start with a half gallon/2 liters a day. Its going to be hard to get it all down at first. Set a reminder on your phone every 2 hours drink
Also im not seeing any water logged. Water will help increase your metabolism. I challenege you to start drinking more water. When your full on water youll crave sugary drinks less and less over time. I was addicted to red bulls i speak first hand.
If its been years and you want to slowly ease into try tracking your daily steps and slowly increase your step count until you feel good enough to exercise.
May I recommend not taking your weight everyday? Your weight will fluctuate naturally up to 5 lbs throughout the day. It can get discouraging. Its best to do it once a week at the same time/day in the same clothes.
